Pittsburgh From the Air


Zucchini Fritters


2 c grated zucchini
1/2 c grated romano cheese
1/2 c freshly chopped parsley
2 eggs, beaten
1 tsp salt
Dash of pepper
3/4 to 1 c flour
1 tsp oil


Mix all ingredients except flour and oil. Then gradually add flour and finally oil. Drop by teaspoonful into preheated pan with vegetable or olive oil. Lightly fry on both sides until golden brown.
